PIGSTICKING IN TIHANY

Traditional pigsticking in Tihany in the skanzen and restaurant called the „Yard of Old Times”

OR :”HOW DO HAM GET TO YOUR TABLE, WHAT IS SMOKED SAUSAGE MADE FROM….”

Traditional natural surroundings, Hungarian folk music, beehive oven, smithy, ethnic collection, lots of peasants' tools, human-size wooden sculptures with the almost 1000 year-old Abbey of Tihany in the background.

This is the place we invite you to take part in a traditional Hungarian pigsticking. The traditions root in Hungarian people so deep, but are effaced by industrial meat-packing activities.

In the old days all people kept pigs and there were pigstickings regularly from November to March every year. These days were undeniably combined with drinking palinka and rip-roaring.

We feel it important to keep this tradition in life, handing them down to after ages, that's why we organise pigstickings in the skanzen and restaurant called the „Yard of Old Times”.

In case groups present themselves, we perform the activities according to their schedule with the chosen programs.

Our programs:

Pigsticking in one day

at least for 15 people

(In case of less participants, please, ask for our personal offer).

Gathering early in the morning, drinking palinka as cordial and to gather confidence.

Sticking, breaming, then:

BREAKFAST:

Jelly with bread or peasant-plate from the previous pig-sticking (containing: ham, sausages, bacon, lilac onions, pickles)

Drinks: palinka, wine, hot wine, hot tea, mineral water, syrups (elderberry, raspberry, blackberry), coffee.

After breakfast: unsqueezing and slicing the pig.

Lunch:

1:

Fresh spare-rib soup, fresh roast joint, roast pork chop, lilac cabbage.

Drinks: same offer as with breakfast.

2:

Feast-cabbage (especially made when pigsticking) with potatoes, pig-liver with potatoes.

Drinks: same offer as with breakfast.

After lunch the processing goes on with filling black-pudding, sausages and rendering raw bacon for lard.

Dinner:

Freshly filled and roast black pudding, sausages with potatoes, braised cabbage and pickles.

Than leaving for home.

Price of the program: 13 000 HUF/person

Price with unlimited drink consumption: 15 000 HUF/person

Prices for children:

Children under 6: free

Children aged 6-14: 50 %

Minimum number of participants: 15.

PIGSTICKING IN TWO DAYS, VERSION "A”:

AT LEAST FOR 15 PEOPLE

(In case of less participants, please, ask for our personal offer).

Arrival: after 2.00 p.m. to our lodgings, then dinner with tasting wines in the restaurant.

Wines you can choose from (0,5 litre altogether):

  • riesling
  • chardonnay
  • blue franc
  • merlot
  • zweigelt

Dinner:

1.:

„Celler-stew” –stew cooked in kettle with home-made pickles.

2:

Stuffed cabbage with home-made bread

Drinks: wine, beer, elderberry, raspberry, blackberry syrups, mineral water, coffee

Music and dancing with our accordion player till short breath.

Next morning: Pigsticking, same as the one-day program.

PIGSTICKING IN TWO DAYS, VERSION "B”:

AT LEAST FOR 15 PEOPLE

We inverted version A, so the pigsticking is on the first day, after a little rest the evening program is dinner with some music and dancing, and we offer a substantial breakfast next morning.

BREAKFAST:

Jelly with bread or peasant-plate from the previous pig-sticking (containing: ham, sausages, bacon, lilac onions, pickles)

Drinks: palinka, wine, hot wine, hot tea, mineral water, syrups (elderberry, raspberry, blackberry), coffee.

After breakfast: unsqueezing and slicing the pig.

Lunch:

1:

Fresh spare-rib soup, fresh roast joint, roast pork chop, lilac cabbage.

Drinks: same offer as with breakfast.

2:

Feast-cabbage (especially made when pigsticking) with potatoes, pig-liver with potatoes.

Drinks: same offer as with breakfast.

After lunch the processing goes on with filling black-pudding, sausages and rendering raw bacon for lard.

Afternoon snack:

Tasting fresh-made greaves with bread with fat and lilac onion. Drinks according to your taste from the choice written above.

Rest in your rooms, than you are welcome at the agreed point of time for a special feast –dinner on pig killing - with tasting wines, music and dancing. Our accordion player serves you with the sufficient folk-music.

WINE-TOUR COMBINED WITH PIGSTICKING:

This program is worked out by combining the above ones, taking into consideration the requirements of the customers, but also adding some hiking activity to it in order to make you get acquainted with the nature and local cellars of Tihany.

Day 1:

Arrival to your lodgings than meeting you at the agreed point of time in the skanzen and restaurant called the „Yard of Old Times”. Drinking heavy palinka, reviewing the program, giving the details of the pigsticking programs of the next day and going on our way to the cellars while showing you the „natural wonders” of the peninsula.

We have opportunities to visit 2-3 cellars, tasting wines from their barrels, eating some snack (bread with fat or patties). It depends on the participants' requirements and „staying power”. The hike must take at least 3 hours or so, that's why we recommend suitable clothes and hiking shoes. After the program we go back to the restaurant or to the lodgings to have some rest. In the restaurant we pin the fish prepared for our dinner on hooks and put them into our bucan. As you may know, in Tihany eating fish this way has old traditions. That's why it is part of our program, though we take part in a traditional pigsticking next day. Till the fish get smoked enough, we have a 1,5-2-hour relaxing wine-drinking, talking program with music and a short walk in order to get to know the exhibition of the skanzen.

By the time everybody arrives back and the fish also get ready, we have dinner-the speciality of our restaurant called the „Yard of Old Times” – such as trout, carp-bream, razor-fish, bream).

We serve potato-salad with onions and home-made bread with it. During and after our dinner we have accordion-music.

When we get tired, we go to bed as we have pigsticking program the next morning.

Next morning: Pigsticking

Wine-tour with roasting squealer:

One of the aims of this program is showing you the beautiful natural sights of the peninsula that are worth to be seen throughout the year and invite you to the local cellars for some wine-taste.

We meet at the agreed point of time in the restaurant called the „Yard of Old Times”. After some heavy palinka we talk about our programs – we can have lunch if required - and start for a walk to show you the natural sights.

We have opportunities to visit 2-3 cellars, tasting wines from their barrells, eating some snack (bread with fat or patties). It depends on the participants' requirements and „staying power”. The hike must take at least 3 hours or so, that's why we recommend suitable clothes and hiking shoes. After the program we go back to the restaurant hopefully in a good mood, where the crackling roast squealer has got ready in the beehive oven.

While drinking some more wine we are served the food on big wooden plates with chips and braised cabbage by the cook. We get some bouillon in clay plates before that.
